100 g of chicory
250 g Brussels sprouts
1 shallot
2 anchovy fillets in spicy sauce
1 egg
Salt, pepper, spices, oil


Blanch the halved Brussels sprouts for a few minutes, cut the chicory into strips and slice the shallot.
In a non-stick pan, melt the anchovy fillets with a spoonful of oil and brown the shallots. Add the chicory and cook for a few minutes, adding 2-3 tablespoons of water. Add the Brussels sprouts and cook for a few more minutes. Finally, make a well in the vegetables and break the egg into it, put the lid on and cook until the egg white sets. Season with salt and pepper to taste.
