Strawberry Yogurt Pancakes – Healthy Cooking

Yogurt pancakes with strawberries: thin, soft and quick to prepare. Perfect for breakfast, they are always a great solution as they are very versatile. This time I propose a super tasty and light recipe (cooked in a non-stick pan without oil) with strawberries mixed in the dough during cooking. You can serve them with maple syrup instead of powdered sugar. See also the recipe for light yogurt pancakes

COMPONENTS

200 g plain yogurt
2 eggs
a pinch of stevia or 1 tablespoon of sugar
120 g of flour
1 teaspoon of baking powder
1/2 teaspoon baking soda
a pinch of salt
strawberries
powdered sugar

INSTRUCTIONS

In a bowl, mix the yogurt with the eggs with a fork. Add stevia or sugar, salt and mix for a while. Finally add the flour with baking powder and soda and mix to combine all the ingredients. Cut the strawberries into slices. Heat a non-stick pan over medium heat, pour a spoonful of the mixture, place the strawberry slices on top and cook for a few minutes on both sides. You need to leave space between the pancakes and the edge of the pan because they will increase in volume during cooking. When they are ready, sprinkle them with powdered sugar
