Polish Apple Pancakes – Healthy Kitchen

Today we tour Europe with a really delicious apple dessert: i apple pancakes Polish, or “racuchy”.They are yeast pancakes enriched with apples and sprinkled with powdered sugar. The recipe is more demanding than the usual pancakes, but it is worth dedicating this time because they are very soft, delicious and have the taste of donuts. The original recipe calls for frying in oil, but I cook them in the W.pots non-stick pan without using any fat.

Racuchy or Polish apple pancakes

COMPONENTS

500 g flour 0
20 grams of fresh brewer’s yeast
2 tablespoons of sugar
375 ml warm milk
1 egg
2 apples
a pinch of salt

INSTRUCTIONS

Put the flour and salt in a bowl and make a well in the middle. Pour the fresh yeast into the cavity, cover it with the sugar and pour in 1/2 cup of warm milk. Cover the bowl with a cloth and leave it in a warm place for 10 – 15 minutes. After the time indicated, add the remaining milk, the egg and mix well with a wooden spoon (or do everything in the planetary mixer). Let it rest for 1 – 1.5 hours in a warm place to double in size.
Meanwhile, peel the apples and cut them into cubes. Add the apples to the mixture and stir. Prepare a cup of hot water. Heat a non-stick pan and then drop in a spoonful of batter, dipping the cutlery into the cup of water each time to prevent the batter from sticking. Cook both sides over medium heat (the pan can’t be too hot because the pancakes burn quickly and the inside remains raw) until golden brown. As soon as they are ready, sprinkle them with powdered sugar. Serve hot.
